What to Look for in a Private Label Hot Sauce Manufacturer

Hot sauce manufacturing has specific regulatory requirements that are distinct from general food co-packing. These three criteria address the most important qualification requirements for this category.

FDA Scheduled Process Filing

Under 21 CFR Part 114, acidified food manufacturers must have a scheduled process filed with the FDA for every product formulation, demonstrating that the process achieves the required pH for safety. Changes to the recipe can require a new scheduled process filing. A hot sauce manufacturer who has not completed FDA scheduled process filing for your specific product formulation cannot legally sell that product in US commerce. This is a legal requirement that must be confirmed before development begins, not after production is complete.

Fermented vs. Non-Fermented Production

Fermented hot sauces use lacto-fermentation to develop complex, layered flavor profiles. Fermentation requires time, controlled pH management, and process monitoring, adding production lead time and requiring specific manufacturer expertise. Non-fermented vinegar-based hot sauces are faster to produce and more accessible to a larger manufacturer base. Hot sauce certification requirements depend primarily on your target retail channel, with specialty and natural channels requiring the most certifications.

SQF or BRCGS third-party audit certification is required by major grocery retail buyers. FDA acidified food facility registration is a legal requirement.
