What to Look for in a Private Label Sauces Manufacturer

Sauces manufacturing has specific regulatory and food safety requirements that go beyond general food co-packing. These three criteria address the most commercially significant qualification requirements.

FDA Acidified Food Registration

Under 21 CFR Part 114, shelf-stable acidified food manufacturers must have a scheduled process filed with the FDA for every product formulation demonstrating the process achieves the required pH for safety against Clostridium botulinum. Changes to the recipe can require a new scheduled process filing. A manufacturer who has not completed this registration cannot legally sell shelf-stable sauce products in US commerce. This is a legal requirement, not a quality option. Confirm your manufacturer has FDA scheduled process filings for your specific product formulation before committing to production.

Fermented vs. Non-Fermented Production

Fermented hot sauces use lacto-fermentation to develop complex flavor profiles. Fermentation requires time, controlled pH management, and process monitoring that adds production lead time and requires specific manufacturer expertise. Non-fermented vinegar-based sauces are faster to produce and more accessible to a larger manufacturer base. Confirm which production method your formula requires and verify your manufacturer has documented capability in that specific method before requesting samples.

Clean Label Formulation Capability
